Stuff you need:
Garlic: 2 cloves
Bell Pepper: 1 chopped fine (medley of colorful peppers earns you bonus points)
Onion: 1 small chopped fine
Tomatoes: 1 chopped fine

Mushroom: 1/2 cup chopped fine
Jalapeno: 1
Chicken Chorizo Sausage: 2 links chopped roughly (you can use regular chorizo)
Eggs: 3
Herbs : Any like parsley, corainder (I used chives)
Salt: As per taste
Pepper: As per taste

Oil: 1 to 2 tablespoon olive oil
Prep:
Chop garlic cloves, tomatoes, onion, Jalapeno, herbs, bell pepper, sausage and keep aside
Beat eggs in a bowl
Cook:
In a nonstick-
Heat olive oil on medium high
Add garlic & Jalapeno (20 -30 sec)
Add onion and saute till translucent
Add bell peppers and saute for a minute
Add tomatoes some salt and pepper and cook till tomatoes soften
Add sausage and cook till they start to brown
Add mushrooms and saute for a minute
Push all the ingredients to the edge of the pan and make some space in the center
Add eggs and keep stirring till they solidify
Mix all ingredients together
Add salt and pepper if needed and herbs
Serving Ideas:
Toast
Wrap in a tortilla like a breakfast burrito
As a side with rice and beans
Extra Special:
Tex Mex seasoning
Shredded cheddar cheese and melt
TIP: If less time at hand to make dish, buy precut veggies like onion, tomato, bellpepper. Your prep time gets almost eleminated.
